While Cedar Ridge Cafe & Bakery started in 2013, its story began a few years before, with a little place called The Cupcake Corral.The Cupcake Corral was the brainchild of the late, self taught baker, Joe Ramaikas, opened in 2010. Serving up cupcakes, named after all your favorite country western performers, cakes, our famous scones, biscotti and so much more. Fast forward three years and add  Le Cordon Bleu trained chef, Paul Holtzman to the mix and now you have CRCB!    Joe and Paul collaborated to open Cedar Ridge. With Joe’s homestyle baked goods and Paul’s breakfast and lunch creations, CRCB was on its way to becoming a town staple!    Sadly, Joe passed away the summer of 2016. He may be gone, but he is certainly ever present in the daily ongoings at The Ridge. His recipes still fill the case, but not without the help of head baker/manager, Michelle Mancuso!    Michelle came to Cupcake Corral in 2012 right before the transition into Cedar Ridge, bringing with her a variety of vegan recipes, both baked goods and savory meals!    Here, in 2018, Michelle and Paul collaborate daily on breakfast and lunch items, both of the vegetarian and vegan variety, creating something for everyone to enjoy! We also became certified kosher in September of 2018!    Cedar Ridge Cafe & Bakery is a cafe and a community space, striving to bring the folks and of Maplewood and South Orange closer together, with the help of delicious food!

Meet Paul! The captain of the CRCB crew! And an inspiration to us all! Paul left his job in the financial world to enroll in culinary school  in 2010 , and to follow his dreams, in his mid-40’s! Soon after graduation,he and his husband, Tony, packed up their lives, and all their animals, in Arizona, and made the trek across the country to join Joe in New Jersey to start Cedar Ridge! In his spare time you can find him at home with his two legged and four legged family. Or upstate at his family lake house.  While in Culinary School at Le Cordon Bleu, Paul had dreams of opening a community cafe in Northern New Jersey, to be closer to his family. Call it Kismet, but Joe was looking for a chef to expand the Cupcake Corral. After a few meetings, and even more trips across the country, a collaboration was born and we have The Cedar Ridge Cafe and Bakery. Our menu is quite extensive, offering a variety of traditional and vegan options.  Don’t miss out on the Avocado Toast, Paul’s fave.

Meet Michelle! Michelle got her start baking only a few years before coming to Cupcake Corral. Self taught in her tiny apartment kitchen, she started selling cupcakes and cookies at local punk shows to raise money for animal shelters. Joe brought her on as his part time assistant in 2012 and after a few short months, she was his full time baker! Once Cedar Ridge was born, so were tons of Michelle’s vegan treats! And by 2017, she developed our whole vegan breakfast and lunch menu that’s still growing today!

Michelle, despite being a baker, does not enjoy sweets! Her favorite thing to eat at CRCB, you ask? Our house-made bagels! Michelle also enjoys reading comic books, collecting records and oddities and in her spare time runs a small non profit focusing on women identifying folks in the arts and music!
